We brunched and learnt at

ETHOS is known for re-imagining plant-based food and the perfect place for trying some less familiar dishes. We partnered with them to explain the Magic behind some of our favourite Vegetarian Brunch Classics to a room full of meat eaters.

Head-Chef Guimas used the flavours and textures of in-season ingredients to create exciting and inspiring dishes, meat-free and influenced by a number of different cuisines. The dishes were familiar, yet 'with an exciting twist'.

We couldn't have found better partners for explaining the tricks behind well balanced meat-free dishes. Head Chef Guimas’ food philosophy had us nodding along in agreement. A meat-lover himself, he believes food & health should be enjoyed in a balanced way: lots of the good stuff, loads of variety, and the odd indulgence every now and then.

Making exciting dishes without using meat can be a little more challenging, but that's where he excels. In his words: knowing how to cook means that you'll be able to turn all sorts of fresh, seasonal ingredients into delicious meals. Go for seasonal to get the best taste - and the lowest cost!

Favourite dish:

Banana Bread French Toast (a twist on his beloved Portuguese Rebanadas)
